Sweet Potato Pancakes

Ingredients

  • 1 medium-sized sweet potato, peeled and mashed (see note below)
  • 1 medium-sized apple, peeled and mashed (see note below)
  • 1/2 tsp baking soda
  • 1/4 cup tapioca flour (add as needed to get desired consistency)
  • 1/4 cup coconut milk (add as needed to get desired consistency)
  • Pinch of salt
  • Pinch of stevia (optional)

Original Recipe Ingredients

  • 1/2 cup mashed sweet potato (the flesh from 1 medium-small cooked sweet potato)
  • 1/2 cup applesauce
  • 1/2 tsp baking soda
  • 1/4 cup coconut flour (add as needed to get desired consistency)
  • 1/4 cup coconut milk (add as needed to get desired consistency)
  • Pinch of stevia
  • Pinch of salt

NOTE – Mashing the Sweet Potato: Peel the sweet potato. Cut into cubes and place in microwave-safe dish with 1T of water. Cover tightly with seran wrap. Heat for 5 min. Remove and mash the softened potato.

NOTE – Mashing the Apple: Follow a similar process as you did for the sweet potato. Peel the apple, cut into small pieces, place in microwave-safe dish. Do NOT add water. Cover tightly with seran wrap. Heat for 4 min 30 seconds. Remove and mash the apple. Add splash or two of water as you mash.

Directions:

Sitr all ingredients together to make batter adding flour and milk as needed to reach desired consistency. Scoop and place on sprayed skillet. Bake around 6 min/side or until slightly burnt-looking in the middle. Don’t worry about the burnt-ness. You can’t taste it, and it’s needed in order to cook the whole cake. Re-spray the skillet between batches.

Makes about 8 small cakes.

Top the pancakes with a fruit topping (THIS MAKES IT TASTE LIKE DESSERT! YUMMM!):

Blueberry/berry topping: Boil mixed berries in skillet  with water, stirring continuously. Add stevia if desired.
